I'd find me a shop guy/car guy that actually wants to do the work an flip it. Your guy seems to talk a good game but doesn't want to actually do the work, hence his shop being dead in the water from what ya said. I'm no car guy, I can't fix'm so I don't mess with them. I would grab repair manuals like Bear said( you can find them cheap used
amazon/used bookstores) or find a guy who actually wants to do the work an make money.
Lots of folks here have an issue with a partner, I can dig it..folks been burned. I do 'partnerships' with several folks, but I vet them like I would if I was wanting someone to take care of sick my mother(she's not, just an example). If they can't/dont come through on their promises, I don't work with them any more. An I don't send business their way.
If you feel you can't find someone you trust to work with, then my advice is the same as Bear's. Invest in manuals an when you get a job, see if you can do it, if not..scrap it or sell it to someone who can. Plenty of info on the net on how much time a repair should take, an access to manuals ain't hard. They sell all day on amazon an at used book stores, or even online at
eBay. You also have a built in network here of car folks who would be willing to talk with you when questions like this come up. Cory, Tater, Liberty, Jord( didn't forget ya this time Jord!) an many others I'm sure I'm forgetting, would be willing to answer a pm from you on questions regarding a fix an such an if it's worth your time an trouble.
I'm no car guy but this is what I'd do if I was going to learn how to repair things an get into them. Manuals, internet, and contacts/network through here.
