It depends on what type of capacitor you are talking about...
Tantalum capacitors obviously contain the rare earth mineral Tantalum, some ceramic packages contain Palladium and are called MCCs for short (Monolithic Ceramic Capacitors). Most contain Aluminum, but all are worth something. It's obviously easier to separate them as you are removing them.

As you can see there is some overlapping in design and what they look like. But if you pay attention, take a few apart, you can become fairly adept and being able to tell which ones are worth money, and your time, and which ones should be thrown into a bucket to be sold as Al scrap.
