you'd be surprised what you could haul.
I put a class 3 hitch on my 2005 subaru legacy. I towed my 15' bass boat around with it until I got my truck. It did fine on flat ground, and up to 65 mph. I had to be conscious of hills, never ran out of power, just had to manually downshift the automatic. I got a lot of comments (mostly compliments) on my setup, but wouldn't hesitate to do it again. Planning on getting a 05-07 outback 3.0 for the wife. I love those cars, easy to work on (if you know what you're doing).
I would be willing to bet you could get a class 2 hitch for your car/van/wagon/whatever and buy a small trailer (Harbor Freight, CL, etc) check HF first to be able to compare prices for utility trailers. There are always a ton of them up here by me. You shouldn't exceed your towing capacity towing anything but ferrous on a small
utility trailer. You don't need to buy a truck, your mileage will drop though.
