I have about 50 old P4 compaq evo desktops that I'm stripping down. I'm left with the cases. Each case has a plastic speaker housing, 1 fan and plastic bezels. Should I strip all the way down to just steal?

Depends on your yard. Yard by me pays sheet iron, clean sheet iron. Sheet iron is $.0165 and clean sheet iron is $.029 a pound.
I don't take any plastic off.
My yard doesn't dock, so I leave everything on. Cases also make great containers for hauling other shred, like hard drive caddies
i strip all plastic off to get cleal lt. iron price....i took my honda accord filled with 200 lbs of cases 3 different times in july...they were still payin 5.50 a 100lbs for clean to bale it up...i think its 2$a 100lbs now....yes 200 lbs of computer cases filled the car up good..trunk...seats...floor
Cases just don't add up in weight- you're hauling mostly air.
This is a load I hauled to the yard a couple of years ago:

That load was about 1350#. Compressing cases isn't an easy task, so I just deal with the bulk. Cases are really just the byproduct of recycling the rest of the machine.
My yard doesn't require the plastic to be removed.
Fill 'em, stack 'em, aaaaaaaand repeat.
my yard gives shred if theres plastic bur clean lt.bailing iron is an extra dollar...no plastic...they even checked the on off button..make sure it was clean
i dont even deal in iron and steel...but when you have 40 empty computer cases of course your gonna cash in....except my son in law saves me brake rotors...i could get 200 lbs in the glove department....lol
